Sourcing Note
With his plantation located on the slopes of the Tacaná Volcano, in the highlands of Chiapas. Marcelino is one of the farmers who has been working with Cafeología since the beginning of the project. As a result, he has achieved great maturity and consistency in his high-quality production. His Typicas benefit from 48 hours of intense fermentation in open cans and 30 days of bed drying. This process ensures that the coffee is as pure as it is fruity.


Tasting note
On the nose : fermentative notes of brioche and cocoa.
On the palate : the lively acidity reminds us of plums, and adds depth to a rich, round cup, with notes of caramel and 75% dark chocolate.
This coffee is suitable for both mild methods and espresso preparations.
