Ibrik workshop
Method history an age-old method
Turkish coffee is the oldest preparation method, the one used at the very beginning of the incredible history of coffee.
Demonstration explanations and levers for action
The sine qua non for a good cup.
Explanation of the parameters to control and the levers for action to improve your cup.
Sensory analysis sharpen your perception
Sensory analysis of the main extraction defects. Each cup is tasted, in order to calibrate with the barista trainer, to refine sensory perception of cup attributes to be avoided or sought.
Practice recipe construction
Drawing of a decision tree, to decide on the variables in order of importance according to coffee and equipment, so as to be able to extract the best from a packet of coffee at home, every time.
Each learner is then given an unfamiliar packet of coffee and all the equipment needed to explore the method, test new tools and practice.
Ibrik and Terres de Café
The IBRIK method, better known in France as Turkish coffee, may not have a good reputation, but it's the oldest way of extracting coffee. Used by Ethiopians and Yemenis from the very origins of coffee drinking as we know it, the Arabs then exported it throughout the Arab-Muslim world.
It's the only method that produces a cup with a dense, powerful, complex and fine body, and it's also the most difficult to achieve. Successfully blended, it is the perfect link between an espresso and a filter coffee, and offers a unique taste experience for the coffee lover.
