In his early thirties, jovial and outgoing, Felipe embodies the young generation of Guatemalan coffee growers who have decided to do things differently from their fathers. Gone are the days of chemicals, deforestation and the race for yields, for commercial coffees sold at -low- market prices. Instead, they use “natural phytosanitary products” and homemade fertilizers, produced in the farm's biofactory, and grow large varieties under forest cover, with controlled fermentations that let nature express itself with finesse. This is our favorite of the year, a legend in the making.

The coffees in the Légendes collection are only roasted once a week, guaranteeing a very fresh roast at all times. As a result, the time between order and dispatch can be up to 8 working days.

Sourcing note

Just fifteen minutes from Antigua, Guatemala's former colonial capital, Finca Gascón sits high on a mountain, at the end of a steep, rain-slicked track. In just a few years, Felipe Contreras, a young farmer, has transformed this declining farm into a magnificent succession of hillside forest plots planted with noble varieties - typica, geisha and caturra. Everything here is organic, thanks to the “bio fabrica” where the various fertilizers applied according to specific soil regeneration needs, natural fungicides and other coffee care preparations are produced. Science at the service of nature and quality. Yet further proof that preserving ecosystems is not only compatible with coffee production, but is also a prerequisite for producing living, complex and unique coffees that reflect the health of the soils from which they originate. Felipe Contreras is an example for a whole new generation of coffee growers.

Tasting notes

Nose: elegant notes of dried jasmine and white peach recall the Geisha variety.

On the palate: the bright, juicy acidity of a fresh apricot blends perfectly with the round sweetness that gives the cup length.

Preparation in Ibrik :

10g-80ml water at room temperature (130 ppm mineralized water, Volvic type) Grind as fine as possible on your grinder, using a WDT if possible to break up lumps and create a more homogeneous extraction Medium to low flame, aim for boiling and end extraction at 2min20.

A concentrated ratio and high temperature generate a perfect balance between the sweetness and acidity of a red apple. Notes of clementine give a fresh, elegant finish.
