Project initiated in 2017 to source the finest bourbons from the Huila region, at a time when this original but fragile variety was tending to disappear from Colombia. Silver medal winner of the Prix Épicure de l'Épicerie Fine in 2019.
Sourcing notes
At the outset of the Bourbon Project, we selected 13 contributing farms out of more than 100 that responded to the call. Since 2023, the coffee has been sourced exclusively from Gabriel Castano's Finca Granada, who proves himself year after year to be the region's most talented and consistent producer of pink bourbons. Many thanks to him. The exceptional terroir, the variety and the fermentation method, which consists of 48 hours' oxidation before the cherry is wet-pulped, give this coffee a distinctive and quite addictive profile.

Every year, as part of the Bourbon Project, we select the best batches of Bourbon Rose from our partner farms in the southern Huila region. A pure, fruity cup.
TASTING NOTE: On the nose: refined and comforting, evoking notes of buttered madeleine, dates and floral pear.
On the palate: the madeleine and pear remain and combine with butterscotch, yellow melon and red fruit undertones. The texture is round and smooth. The finish is full and long, with notes of chocolate truffle and clementine zest. A powerful, subtle, gourmet coffee, sustained by magnificent tension.
