Sourcing note

At the start of the Bourbon Project, we selected 13 contributing farms out of more than 100 that responded to the call.

Since 2023, the coffee has come exclusively from Gabriel Castano's Finca Granada, which year after year proves to be the most talented and consistent producer of pink bourbons in the region. Many thanks to him.

The exceptional terroir, the variety and the fermentation method, which involves oxidising the cherry for 48 hours before wet-pulping, give this coffee a distinctive and quite addictive profile.

Tasting note

The nose: The nose is refined and comforting, evoking notes of buttered madeleine, dates and floral pear 

The palate: madeleine and pear remain and combine with butterscotch, yellow melon and red fruit undertones. The texture is round and smooth.

The length in the mouth is full, long on notes of chocolate truffle and clementine zest. 

This coffee is roasted for espresso methods and slow coffee methods.
