Coffee Thomas Guzmán Geisha Nature
The most experienced producer in the Cafeologia network has honored us with access to his small parcel of geisha, which we offer as a treasure.
Sourcing Note
For the past fifteen years, Thomas Guzmán has been cultivating an agroforestry hectare of Geisha as the treasure of his farm. These geishas, particularly well adapted to the fertile soils and harsh climates of the Chiapas highlands, give us what we've come to expect from great coffees: a pure, fruity, floral cup. A 48-hour oxidation before drying on African beds gives this coffee an intensity we'll never tire of!

Tasting note
Nose : suggests a complex, rich cup, with notes of kiwi, Timut pepper and 75% dark chocolate.
On the palate : juicy acidity reminiscent of fresh strawberry, with grand cru cocoa supporting the cup's smoothness and roundness.
This coffee has a uniroast roast: it is suitable for both mild methods and espresso preparations.
Sourcing note
The Vasquez Sanctiz family masters the entire coffee value chain: cultivation, process and cup.
It is not by chance that they consistently deliver a production worthy of the highest international standards.
They do us the honor and the friendship to sell us the whole of their modest and magnificent annual production. Not to be missed...
A speciality coffee
Speciality coffee are the best batches of coffee from farms or local cooperatives. They are fully traceable (botanical variety, region, plot) and respect demanding processing methods. This guarantees exceptional quality in the cup.
