Here, we're at the roots of the speciality coffee industry.
In El Salvador, Los Pirineos is a legendary farm, a pioneer, always at the top, and we are proud to represent them in France.
Sourcing note
El Salvador is definitely taking us from summit to summit. After the Himalaya farm, it was the coffees from the Pirineos farm that swept us off our feet.
The late Gilberto Baraona, who died far too soon from Covid in 2020, had raised his farm to the rank of Latin America's speciality coffee elite.
Since the 2000s, he had been experimenting with all the varieties he could get his hands on in his small garden, then, after tasting, planting the best renditions in plots. He was also an explorer of post-harvest treatments to bring 'Salvador' out of the uniformity of washed coffees.
Fortunately, his children, Diego and Fabiola, have taken over and the coffees are as magnificent as ever.


Tasting note
On the nose: notes of Grand Cru cocoa and strawberry jam.
On the palate: notes of morello cherry and strawberry, the round, silky body is supported by a sweetness reminiscent of brown sugar.
This coffee is roasted for espresso methods and slow coffee methods.
