Sourcing notes
Volcan Azul, a farm more than a hundred years old, is now run by Alejo Castro, the sixth generation of farmers. Alejo, who is in his thirties, is part of the modern coffee movement and has considerably developed his production: plot-based planting, adaptation of prestigious botanical varieties, a strategy of sustainability and goldsmith's precision in the many processes used on the farm.
Anaerobic fermentation, mastered here and far from fashionable stereotypes, adds power to this already extraordinary coffee.


Tasting notes
Nose: rich aromas of kirsch cherries and panela.
In the mouth: the cup combines the juiciness of black cherry, the roundness of tropical fruit, the sweetness of rooibos and the liveliness of clementine. A dense, syrupy body.
Banyuls and violets round off the finish of this complex, gourmet cup!
This coffee is roasted for both espresso and slow coffee methods.
