Coffee Finca Soledad Sidra Washed
At Pepe Jijon, every cherry is treated like a precious stone on his paradise farm La Soledad. With this washed Sidra, he offers us a highly floral and complex cup. A rarity.
Sourcing note
Pepe Jijon is a local celebrity in Ecuador. A mountaineering explorer between 2000 and 2013, he was the first Latin American to climb the world's seven highest peaks and reach the North Pole. Now a coffee farmer, Pepe makes coffees in the same way he climbed the summits - with a sense of achievement! Nano-produced entirely by his family, each batch is a treasure trove of haute couture. He welcomed us with his daughter, a student barista, in impeccable French. This sidra was the big winner at the cupping tables.

Tasting notes
Nose: fine, reminiscent of coconut and vanilla custard.
Palate: the cup is delicate and supple. Orchard fruits such as apricot, mirabelle plum and williams pear mingle with floral notes of black tea, jasmine and lily. The body is silky and dense, and the finish offers a bouquet of springtime white flowers.
A floral, complex coffee.
This coffee is roasted for both espresso and mild methods.
