Ratibor Hartmann - Maragogype Washed - Légendes

A tribute to the founder of this now-famous farm, Ratibor Hartmann Sr. The son of Hungarian immigrants, he founded the farm in the 60s, with a vision that ran counter to the coffee farming methods of the time: to conserve the forest and wild life and introduce coffee cultivation. It is this preserved terroir that is home to the varieties that have shone in the “Best of Panama” since the 2000s, lifting Finca Hartmann into the small circle of world-renowned farms. Today, the Hartmann family preciously preserves the natural treasure bequeathed by “Papa Hartmann”, and graces us with nano-lots that are always at the top of world production. Here, a juicy, fruity, fine and complex maragogype.

The coffees in the Légendes collection are only roasted once a week, guaranteeing a very fresh roast at all times. As a result, the time between order and dispatch can be up to 8 working days.

Sourcing note

This succession of farms rising up from the mountains literally emerges from the jungle and the wilderness. An exceptional terroir preserved, a passionate family, who create the perfect link between the place and the coffee product, and refine their know-how from generation to generation, with fermentations and drying as demanding as they must be to remain among the elite, and bring us the pleasure we are so happy to share.

Preparation in Ibrik :

9g-80ml water at room temperature (mineralized water between 130/150 ppm) Grind as finely as possible on your grinder, using a WDT if possible to break up lumps and create a more homogeneous extraction Medium to low flame, aim for boiling and end extraction at 2min

A long ratio with this coffee offers a floral, elegant cup. Notes of dried jasmine and cooked apricot. The bright, juicy acidity is reminiscent of nectarine, and the body is velvety and buttery.
