It took such a personality to transform a dry mountain devastated by 30 years of agrochemical corn cultivation into a productive forest under which Guatemala's finest Geisha and Pacamara trees flourish. A titanic task, designed to establish sustainable and fertile agriculture, and to bring out champion coffees that shine every year in the Cup of Excellence, with a first place finish in 2022.

The coffees in the Légendes collection are only roasted once a week, guaranteeing a very fresh roast at all times. As a result, the time between order and dispatch can be up to 8 working days.

Sourcing note

Thirty years ago, José Roberto bought this old corn farm in this dry region, then gradually extended the surface area of his property by buying other farms in the vicinity, El Dorado and Montaña Helada, to reach 990 hectares. 330 are planted, and 660 are primary forests under conservation.

It was a desert here, a deforested mountain cultivated with corn. No fewer than 500,000 trees had to be planted to regenerate the land, and the slopes terraced to combat erosion before the coffee trees could be planted, to nourish the soil depleted by years of intensive cultivation sprinkled with chemical inputs. A mammoth task.

Today, the coffee trees are impressively vital and the cherries are huge. The Geisha tastes like papaya and the Pacamara, like peach and dried apricot. No herbicides, fertilizers are partly produced on the farm.

This farm is designed to produce large volumes of coffee. The best micro-lots benefit from the quality of the infrastructure and the large, qualified staff.

Preparation in Ibrik :

10g-80ml water at room temperature (130 ppm mineralized water, Volvic type) Grind as fine as possible on your grinder, using a WDT if possible to break up lumps and create a more homogeneous extraction Medium to low flame, aim for boiling and end extraction at 2min20.

A concentrated ratio and high temperature generate a perfect balance between the sweetness and acidity of a red apple. Notes of clementine give a fresh, elegant finish.
