“I am a specialty coffee producer, it is a lifestyle that I have chosen and I live every day of my life as a reward.” Former mountaineer, hyper active, colorful and funny, always positive, Pepe Jijón built his dream by producing haute couture coffees with his family at the top of a mountain of course! His life is punctuated by harvests, fermentations and whenever possible, by trips to meet the large community of coffee enthusiasts. Very inspired by Panama, its coffees are at the forefront of Ecuadorian production, all in purity and Delicacy. Sourcing note  Perched on the top of a mountain completely reforested by the Jijón family, this micro farm is a delight. The house built of bamboo makes us lose our bearings, could we be in Bali? There, Pepe, Monique and their son Juan supervise all the production, with the help of another family who lives in another house on the property. Here, only two varieties, Sidra and Geisha, and ultra-controlled fermentations, and very long dryings, protected from light, which strongly distinguish the profiles of the coffees, all finesse and length.

Recommended Dripper: Hario Switch 12g-200ml / water 91° (mineralized at 120ppm) Pour 60g of water with the Switch in the closed position at 0:45 open the Switch and pour in up to 130g Allow to drip then at 1:15 pour in up to 200g Extraction complete at 2:35

Preparation in Ibrik :

9g-80ml water at room temperature (mineralized water at 130 ppm, Volvic type) Grind as fine as possible on your grinder, using a WDT if possible to break up lumps and create a more homogeneous extraction Medium to high flame, aim for boiling and end extraction at 1min45.

A highly complex coffee with aromas of elderberry and honey. The vibrant acidity of a fresh, juicy apricot keeps it fresh and full-bodied throughout.
