This coffee, one of the House's great classics, is decaffeinated in Colombia using the "sugar cane" method, i.e. using cane sugar solvents.
Sourcing note
At the outset of the Bourbon Project, we selected 13 of the more than 100 contributing farms.
Since 2023, the coffee has come exclusively from Gabriel Castano's Finca Granada, who proves himself, year after year, to be the region's most talented and consistent producer of pink bourbons. Many thanks to him.
The exceptional terroir, the variety and the fermentation method, which consists of 48 hours of oxidation before the cherry is wet-pulped, give this coffee a distinctive and quite addictive profile...
Tasting note
On the nose: notes of Gianduja and sweet spices.
On the palate: notes of strawberry and 85% dark chocolate. The body is round and silky.
