Alejo Castro - Volcan Azul Estate - Galeron Geisha Anaerobic Natural - Légendes
How can one best embody a transition towards modern coffee farming? It was by fully appreciating his terroir and his responsibilities that Alejo Castro was able to gently transform the family farm into one of the world’s leading speciality coffee farms. From overall sustainability to varietal selection, fermentation, drying and sorting, nothing escapes this process, which began over ten years ago. Mineral, fruity and pure are the attributes that characterise all the coffees he produces.

Sourcing note
Situated on the fertile slopes of the still-active Volcan Poas, Volcan Azul is first and foremost a conservation area, with barely a quarter of its 300 hectares planted to vines. The rest is a nature reserve consisting mainly of forest and streams, sanctuaries for numerous wild animals. This predominance of nature generates a micro-climate conducive to perfect fruit ripening and ideal conditions for fermentation and drying. With its state-of-the-art infrastructure, highly qualified permanent staff and optimal agronomic management, it's no wonder that Volcan Azul coffees regularly feature in the Cup Of Excellence awards. This SL28 enabled us to win the Brewers Cup with Pierre de Chanterac and the Barista Cup with Marie Picoche, in 2020.
