Sourcing note 

Volcan Azul, a farm more than a hundred years old, is now run by Alejo Castro, the sixth generation of farmers. Alejo, who is in his thirties, is part of the modernity of coffee and has considerably developed his production: plot-based planting, adaptation of prestigious botanical varieties and goldsmith's precision in the many processes used on the farm.

Tasting notes

The nose : rich and fruity, with notes of flambéed pineapple, grenadine and spicy miso. 

The cup : the cup is syrupy, full-bodied and oscillates between the deliciousness of Banana Bread, amber rum and a sublime cocoa bean with red fruit undertones. The cocoa bean and light lemongrass finish is persistent.

This coffee is roasted for espresso methods and slow coffee methods.

Sourcing note

More than one hundred years old, the Volcan Azul farm is now run by the sixth generation farmer, Alejo Castro. Alejo, 30 years old, is strongly focused on the modernity of coffee making and has considerably updated production methods: plantations divided into parcels, adaptation of prestigious botanical varieties and meticulousness as standard for the many farm processes. Volcan Azul is my favourite farm in Costa Rica because everything is thoroughly methodical. Moreover, the Castro family is very friendly and desires above all to do the job well and makes every effort to preserve its cultural heritage. This cafe is for me the image of a state of mind.

Volcan Azul est ma ferme préférée du Costa Rica car tout y est bien millimétré. De plus, la famille Castro est très attachante et est muée par le désir de bien faire et met tout en oeuvre pour préserver son patrimoine naturel. Ce café est pour moi le reflet d'un état d'esprit.
