Here's a recipe shaped to deliver a beautiful espresso with a classic style, but where the care taken in obtaining the coffees used is reflected in the balance of the cup, the mouthfeel and the long, gourmet finish. 3 coffees from our partner farms in Brazil, Nicaragua and El Salvador.

Coffee Boa Vista - 80+ Brazil :

The Bacetti and Jacon families have joined forces to support the programme for sustainable, high-quality coffee farming run by Fazenda Ambiental Fortaleza (Bob-O-Link). Thanks to a rethink of their practices, these two families are able to offer us a cup of quality, supple and delicious. A model of balance and roundness.

Coffee Himalaya Bourbon Rouge -85+ Salvador :

New harvest! Finca Himalaya is a picture-postcard plantation nestling high on the slopes of a volcano. Its owner, Mauricio Salaverria, a 5th-generation grower, is a virtuoso perfectionist: planting under shade, entirely parcelled out, drying on mats, custom preparation and mastery of the 4 methods of treatment-preparation: natural, pulped, washed and anaerobic.

Coffee Old Yeti -88+ Ethiopia :

Like vines, very old coffee trees produce fewer fruits, but they are higher in sugar and offer a different cup profile: rich, honeyed and deep. These fruits used to be added indiscriminately to the overall harvest. Here, they are isolated to form an exceptional batch.

Coffee Classic Expresso - Blend :

A great classic espresso, clean, balanced and deep, for lovers of speciality espressos. A blend of coffees from 3 American countries (Nicaragua, El Salvador & Brazil) for a cup full of power and character.

A coffee that is both round and powerful, with dominant notes of chocolate and hazelnut. The acidity is restrained but gives the cup its full body. A lovely sweet, gourmet finish. This blend has been specially profiled and roasted for espresso enjoyment!

Coffee Boa Vista - 80+ Brazil :

A smooth, gourmet cup, perfect for espresso fans. Fazenda Ambiental Fortaleza represents the new Brazilian coffee sector, with fully traceable and sustainable coffees.

On the nose: notes of chocolatenuts and butter.

On the palate: the cup is as gourmet as you could wish for, with notes of chocolate truffle, walnut praline and a hint of dried apricot.

The body is round and smooth. 

Coffee Himalaya Bourbon Rouge -85+ Salvador :

One of the first coffees sourced by Christophe Servell, Himalaya Bourbon Rouge comes from a farm nestled on the slopes of a volcano and offers a fruity, chocolatey cup that delights year after year. One of our classics.

The Himalaya Bourbon Rouge is a Salvadoran coffee of great substance and roundness, recommended for espresso enthusiasts. Lots of body and sweetness, hazelnut always, much cocoa and a fruity finish. Intensity restricted by a dregree of acidity.

Coffee Old Yeti -88+ Ethiopia :

Separately collecting the hundred-year-old trees around the village of Yeti was Christophe Servell's first project, and it's still one of the House's hits. This grand cru offers a round, gourmand and deep cup.

The nose : creamy, spicy and chocolatey

The mouth : notes of caramelised almonds, cardamom, apricot jam and milk chocolate.

The cup is round and gourmet.
