A little history

The Chemex Cafetière is a filtre cafetière design invented in 1941 by a chemist, Peter Schlumbohm, in the United States. It is exhibited in the permanent collection in the Museum of Modern Art in New York and in the Corning Museum of Glass in the State of New York, in the USA.

Profile

In addition to its design, what swets the Chemex apart from a V60 Hario or another filtration system is its thick filtre with an extremely low porosity, which thus allows very little material to pass through. The result in the cup is therefore very pure, perhaps even too pure. The very best coffees have difficulty fully expressing their character with this method. 

Strengths and/or weaknesses 

• The Chemex allows you to easily prepare large quantities of coffee

• The available sizes are 1 to 3 cups; 3 to 6 cups; 8 cups

Recipe

For 6 cups Ingredients :

• 600 g of water at 93° (Montcalm, Volcania or Volvic)

• 36 g of coffee

• Prepare a pre-infusion by adding 60 g of water, allow to infuse for 30 seconds.

• Add the water in several steps (30 to 40 g with each pour) using a circular movement from the centre, towards the outside of the filtre, around the wall and back to the centre.

• Stop when you reach 600 g of water
