Sourcing Note

Coffee Volcan Azul Caturra - 85+ - Costa Rica :

Volcan Azul is more than a hundred years old and is now run by Alejo Castro, the sixth generation of farmers. Alejo, who is in his thirties, is part of the modern coffee movement and has considerably developed his production: plot-based planting, adaptation of prestigious botanical varieties and goldsmith's precision in the many processes used on the farm.

Coffee Chania Estate French Mission Fully Washed - 88+ Kenya :

Chania Estate has been run by the Harries family since 1926. The technical management of the farm is impeccable, with an exceptional range of varieties, including the old but no less sublime French Mission, the first variety planted in Kenya and the ancestor of SL. They are processed here using the Kenyan double steeping method, which gives the coffee a very pure flavour.

Coffee KSF Heirloom Honey - 85+ Ethiopia :

The first batch we bought was in 2019, when we discovered this farm and its soul, Khalid Shifa, who has since become a friend and close partner. This batch comes from his own orchard and the forest next to it. One of our favourite coffees, to be enjoyed all year round and on all occasions.

Coffee Himalaya Bourbon Rouge - 85+ Salvador :

New harvest! Finca Himalaya is a picture-postcard plantation nestling high on the slopes of a volcano. Its owner, Mauricio Salaverria, a 5th-generation grower, is a virtuoso perfectionist: planting under shade, entirely parcelled out, drying on mats, custom preparation and mastery of the 4 methods of treatment-preparation: natural, pulped, washed and anaerobic.

On the nose: notes of sweet spices, stone fruit and chocolate.

On the palate: a silky, enveloping texture. The cup oscillates between milk chocolate and stone fruit, underpinned by the slight exotic acidity that is the signature of this iconic Volcan Azul coffee.

The finish reveals a delicate redcurrant and pomelo.

Coffee KSF Heirloom Honey - 80+ Ethiopia :

KSF, which stands for Khalid Shifa Farm, is our main partner in Ethiopia. His coffees are as beautiful and honest as he is! And so delicious. Here, a Heirloom Honey that takes us to a lovers' paradise of fine coffees.

The nose : a rich cup with notes of black teavanilla and tropical fruit.

The mouth : syrupy, with notes of Darjeeling black teamango candy and jasmine. The finish is lingering and indulgent, with pastry notes of tonka and cardamom roll.

Coffee Himalaya Bourbon Rouge - 85+ Salvador :

One of the first coffees sourced by Christophe Servell, Himalaya Bourbon Rouge comes from a farm nestled on the slopes of a volcano and offers a fruity, chocolatey cup that delights year after year. One of our classics.

The Himalaya Bourbon Rouge is a Salvadoran coffee of great substance and roundness, recommended for espresso enthusiasts. Lots of body and sweetness, hazelnut always, much cocoa and a fruity finish. Intensity restricted by a dregree of acidity.
