A full-bodied, fruity version “Made in Huila.” The Vergara brothers have pushed the boundaries of controlled fermentation as far as possible through the use of “bioreactors” and a thermal shock at the end of the process to bring fermentation to an abrupt halt. It’s a boxing match between the process and the terroir, resulting in a powerful sensory punch. The floral profile evokes roses, while the lively acidity of fresh strawberries comes through with intensity. The tasting experience lingers with a long, refreshing finish marked by notes of eucalyptus. A competition-caliber lot… and voted France’s best espresso of 2024!
