A great coffee has nothing to hide. Roasting should reveal its aromas without masking them with over-roasted notes (smoky, burnt, cold tobacco, charcoal) or under-roasted notes (cereal flavors, vegetal bitterness).

The bitter and burnt taste commonly found in industrial supermarket coffees comes from over-roasting, whose purpose is to hide major defects. The massive presence of major and minor defects in these coffees explains their lower price compared to quality coffees free from defects.
