Everything You Need to Know About Cold Brew: The Guide to Perfect Brewing

As temperatures rise, our desire for coffee does not disappear—it simply changes form. At Terres de Café, we particularly enjoy cold brew, a cold brewing method that reveals a different side of specialty coffee. Smoother, slower, and remarkably elegant, this preparation creates a refreshing beverage that highlights the full aromatic richness of the coffee bean.

Unlike iced coffee, which is brewed hot and then chilled, cold brew relies on a cold extraction process carried out over several hours. Water slowly comes into contact with the coffee, resulting in a rounder flavor, lower perceived acidity, and often surprisingly expressive aromas.

The Fascinating Origins of Cold Brew Coffee

An Ancient Tradition from Japan

The history of brewed coffee dates back several centuries. The earliest traces of this method appeared in Japan during the 17th century. The famous Kyoto towers allowed water to pass through ground coffee one drop at a time.

This fascinating technique relied on patience. Every drop contributed to the extraction process, helping to create a delicate beverage. Long before the emergence of modern coffee shops, this method already reflected a strong commitment to precision and quality.

The Evolution Toward Modern Consumption

Over time, cold brew moved beyond Japanese traditions and conquered coffee shops around the world. The rise of specialty coffee has greatly contributed to its popularity.

Today, this beverage has become a summer essential. Its refreshing character, low acidity, and naturally smooth taste appeal both to coffee enthusiasts and consumers seeking new taste experiences.

How to Prepare Your Cold Brew at Home

Choosing the Right Grind Size and Ratio

A successful cold brew starts with selecting the right coffee. At Terres de Café, we always recommend using freshly roasted whole-bean coffee, ground just before preparation.

The grind size should be coarse, similar to what is used for a French press coffee maker. A grind that is too fine may make filtration difficult and introduce bitterness.

For a consistent and suitable grind.

To prepare approximately 800 mL of cold brew:

  • 80 g of coffee
  • 800 mL of water
  • A coarse grind

This ratio produces a balanced, expressive beverage that is particularly enjoyable to drink.

Steeping Time and Filtration Steps

Place 80 g of coffee into a container and add the water at room temperature.

To improve the quality of your water.

Gently stir to ensure that all the grounds are fully saturated. Then let the mixture steep for 18 hours at room temperature.

Once the brewing time is complete, carefully filter the preparation using a paper filter, cloth filter, or fine mesh strainer.

Transfer your cold brew to an airtight bottle and store it in the refrigerator. Serve your beverage well chilled, either plain or over ice, according to your preference.

Common Mistakes to Avoid When Brewing

Certain mistakes can affect the quality of the final result:

  • Using a grind that is too fine
  • Reducing the brewing time
  • Using coffee that is too old
  • Neglecting water quality
  • Skipping the filtration step
  • Leaving the preparation at room temperature for too long after extraction

The Benefits of Cold Extraction

A Smoother Drink for Easier Digestion

One of the main advantages of cold brew is its smoothness. Thanks to its cold extraction, this method reduces the perception of acidity often found in certain coffees.

As a result, many coffee lovers enjoy a more balanced beverage, with less harshness on the palate and a particularly pleasant texture.

An Explosion of Natural Flavors and Aromas

Cold brew often reveals aromas that differ from those found in a hot brewing method.

Depending on the origin of the coffee, you may discover fruity, chocolatey, or indulgent notes. This method also highlights the bean's natural sweetness and offers a new perspective on terroir.

At Terres de Café, we particularly enjoy coffees with complex aromatic profiles that develop excellent length on the palate when prepared as cold brew.

Where Can You Find the Best Beans for Cold Brew?

The Importance of an Appropriate Roast Profile

Not all coffees react the same way during extraction. Bean quality and roasting precision play an essential role in the final result.

Freshly roasted specialty coffee provides greater aromatic clarity and better flavor expression. The choice of coffee directly influences the taste, balance, and richness of your beverage.

Cold Brew FAQ

What is the difference between cold brew and iced coffee?

Cold brew is prepared through a long steeping process lasting several hours. Iced coffee is generally brewed hot and then cooled down. As a result, cold brew is typically smoother and less acidic.

How long can cold brew be stored?

Stored in an airtight bottle in the refrigerator, cold brew can be enjoyed for 5 to 7 days while maintaining its aromatic qualities.

Does cold brew contain more caffeine?

It depends on the ratio used. Some cold brew recipes are more concentrated than traditional filter coffee and may therefore contain more caffeine.

Can cold brew be heated?

Yes. Although it is designed to be enjoyed cold, cold brew can be gently warmed. You will discover a different aromatic expression of the coffee while still preserving some of its characteristic smoothness.
