A farm that is over a century old, Volcan Azul is now run by Alejo Castro, a sixth-generation farmer. Alejo, who is in his thirties, is committed to modern coffee production and has significantly improved his production methods: small-scale plantations, adaptation of prestigious botanical varieties, and precision craftsmanship applied to the many processes carried out on the farm.

South Huila x 10 capsules:

At the start of the “Bourbon Project,” we selected 13 contributing farms from over 100 that responded to the call. Since 2023, the coffee has come exclusively from Gabriel Castano's Finca Granada, which year after year has proven to be the most talented and consistent producer of pink bourbons in the region. Thanks to him. The exceptional terroir, the variety, and the fermentation method, which involves 48 hours of oxidation before wet pulping the cherries, give this coffee a distinctive and rather addictive profile.

At 2,000 meters above the Baru Volcano, in the village of brown gold prospectors, this forest farm is one of the most beautiful in this fabulous region. Eighteen hectares are cultivated with Geisha, and ten hectares are set aside for conservation, where wildlife reigns supreme.

Leopards, jaguars, and panthers are proof of the health of the area's living heritage, but they terrify the farm workers who live there...

Here, there are no pesticides or synthetic fertilizers, but a great deal of care, expertise, and passion to produce one of the best coffees in the world.

Jaen Decaffeinated Organic Capsules x 10:

Specialty coffee from the Cajamarca region of Peru. This coffee is decaffeinated using the Swiss Water method, a process that best preserves the coffee's aroma. It is also the most sustainable, as the decaffeination water is filtered and reinjected into the city's water system.

Nose: refined and comforting, evoking notes of buttered madeleine, dates, and floral pear.

Palate: madeleine and pear linger and combine with butter caramel, yellow melon and undertones of red fruit. The texture is round and smooth. The finish is full, long on notes of chocolate truffle and clementine zest. A powerful, subtle and indulgent coffee, supported by magnificent tension.
