We owe the "scores" to the "Specialty Coffee Association of America" which has defined a very strict rating protocol to assess the quality of specialty coffee. This rating allows industry players and amateurs to have a common language. During this tasting protocol, the main criteria for evaluating a coffee are noted: smell, aroma, aftertaste, acidity, body, harmony, purity ... The final score classifies the coffee in a hierarchy specific to coffee specialty. The coffee must reach a minimum score of 80/100 to be considered a specialty coffee.
