Alejo Castro - Volcan Azul Estate - Geisha Anaerobic Natural - Légendes
How can we better embody transitional management towards modern coffee farming? It is by fully understanding his terroir and his responsibilities that Alejo Castro has been able to smoothly evolve the family farm into the world elite of specialty coffee farms. Global sustainability, varietal selection, fermentation, drying, sorting, nothing escapes this dynamic initiated more than ten years ago. Mineral, fruity and pure are the attributes that characterize all the coffees of his production.

Sourcing note
Situated on the fertile slopes of the still-active Volcan Poas, Volcan Azul is first and foremost a conservation area, with barely a quarter of its 300 hectares planted to vines. The rest is a nature reserve consisting mainly of forest and streams, sanctuaries for numerous wild animals. This predominance of nature generates a micro-climate conducive to perfect fruit ripening and ideal conditions for fermentation and drying. With its state-of-the-art infrastructure, highly qualified permanent staff and optimal agronomic management, it's no wonder that Volcan Azul coffees regularly feature in the Cup Of Excellence awards. This SL28 enabled us to win the Brewers Cup with Pierre de Chanterac and the Barista Cup with Marie Picoche, in 2020.
