At Volcan Azul, Warm Anaerobic means hot and cold! Indeed, on the slopes of the Poas Volcano, it’s hot during the day, especially in the sun where the fermentation barrels are exposed, and cool at night. This temperature range allows Alejo Castro to manage a high risk process on a shoestring, but here it enhances the power of an exceptional terroir.

Situated on the fertile slopes of the still-active Volcan Poas, Volcan Azul is first and foremost a conservation area, with barely a quarter of its 300 hectares planted to vines. The rest is a nature reserve consisting mainly of forest and streams, sanctuaries for numerous wild animals. This predominance of nature generates a micro-climate conducive to perfect fruit ripening and ideal conditions for fermentation and drying. With its state-of-the-art infrastructure, highly qualified permanent staff and optimal agronomic management, it's no wonder that Volcan Azul coffees regularly feature in the Cup Of Excellence awards. This SL28 enabled us to win the Brewers Cup with Pierre de Chanterac and the Barista Cup with Marie Picoche, in 2020.


Tasting notes
On the nose, rich notes reminiscent of tropical fruits.
In the cup, the acidity is reminiscent of guava, supported by the sweetness of strawberry jam, with a long finish of 70% dark chocolate.
This coffee is roasted for espresso methods and slow coffee methods.
