Sourcing note
The story of this coffee begins when Geovanny Hernandez was a child, taught by his father to grow coffee with respect and love for the land. In 2011, his family acquired the 3-hectare farm, nestled 31 km from Agustín Codazzi in the mountains of the Cesar department. Here, they grow the Castillo variety, renowned for its resistance and excellent cup profile, perfectly adapted to the region's climate and soil. Each harvest is carried out with care, in several passes to ensure that only cherries at optimum ripeness are picked. The coffee is fermented using the water-saving dry method, which gives the cup character and complexity.


Tasting note
On the nose: notes of caramel and 85% dark chocolate.
On the palate: full-bodied and unctuous, with notes of nougat and caramel.
