Sourcing note

Finca Las Flores is a farm located at 1800m altitude, in the Huila region near Bruselas, Colombia. It has won international renown for its many coffees entered in competitions. At Terres de Café, Jordan Tachnakian won the Cezve/Ibrik World Championships in 2024 with the Chiroso variety, as well as the best espresso in France. In 2025, Pierre de Chanterac won gold in Coffee In Good Spirit France. Since 2017, the Vergara brothers, Jhoan and Diego, have turned their attention to specialty coffee production, abandoning conventional coffee, and have positioned themselves as pioneers of fermentation experimentation in Colombia. They quickly understood the importance of farming practices that take the environment and biodiversity into account, with agroforestry as the driving force, in order to produce remarkable, sustainable cup quality. Las Flores produces exceptional varieties such as Chiroso, Geisha and Bourbon Rose, but in 2025 it's the Java variety that has our full attention. First introduced to the island of Java from Ethiopia, this variety has acclimatized remarkably well in the Huila region. Its aromatic profile is intrinsically red fruit, and thanks to the Vergara brothers' fermentation process and the Huila terroir, the coffee displays magnificent notes of raspberry and passion fruit candy. Its silky, enveloping texture reinforces the confectionery aspect.
